Join us for our Caviar Masterclass at 12 pm on Saturday, October 26th with Regiis Ova Caviar President, Shaoching Bishop!
Regiis Ova (“Royal Egg” in Latin) is a caviar company founded in 2017 by Chef Thomas Keller and Shaoching Bishop, former CEO of Sterling Caviar and Tsar Nicoulai Caviar.
Bishop spent six months visiting and sourcing from all the finest caviar farms around the world. This is a highly selective process whereby only a handful of sturgeon farms passes muster with them. Caviar is then chosen for Chef Keller’s restaurants as well as for restaurant affiliates and chef events.
You’ll have the opportunity to taste three different caviars from around the world while learning about each roe and pairing it with three decadent champagnes from Grand Cru Selections. This is a unique and intimate opportunity to explore the world and history of caviar from the finest sturgeon farms in the world.
